Beef Loin
If you can afford it by all means go for the steak. I grill mine in
summer and broil it in winter.
I worked in a meat department for several years so I will add a few tips throughout these
pages.
Sirloin
Sirloin is the cheaper cut and if you buy the smaller end pieces they are more
tender.don't be afraid of marbled fatted meats. When you grill or broil a piece of meat
all the excess fat goes away. The more marbling a piece of meat has, the more tender it
will be.
Porterhouse
A Porter House is actually a Fillet Mignon on one side of the bone and a N.Y. strip on the
other side. Buy 2 thick ones on sale and eat really well for 2 meals. Look at how much
they are charging you to cut the meat from the bone for you.($2-$4lb)
Beef Rib
In my opinion this is the best cut of meat. Lots of
marbling makes this cut tender. Buy a whole boneless rib when they are on sale and slice
it yourself with a good sharp knife. It's not that hard. The savings more than make up for
the freezer bags you will put them in. Also if you can get your hands on a rotisserie...
It's the greatest thing you ever put in your mouth. Ask your butcher for a wrapped and
tied Boneless Beef Rib Roast when you have a special occasion. I do one for Christmas
every year.
Beef Chuck
I am not a roast person. I do not have the time nor
patience to cook a roast. However if you would like to contribute a recipe, that is
wonderful.
Chuck Eye Steak
If you can find it Chuck eye steak is a cheap alternative to Loin steaks
($2.99lb.). It is well marbled and great grilled or broiled. Chuck is usually a tougher
meat which needs to be cooked slowly and as I said earlier I don't have the patience.
Beef Round
I don't buy round. It's just too tough for me.
Beef Ground
Never buy ground beef! You are just going to have to trust me on this one. In stead buy Ground Chuck or
Ground Round. I have horror stories about what really goes in ground beef.
Pork Loin
Buy a whole boneless pork loin when they are on sale
($2.99lb.). Slice into chops and put in freezer bags. You won't believe how much you save.
Start slicing on the end that isn't marbled and when you get to the part where you begin
to see marbling stop. What you have left is a very good blade roast.
Pork Butt
My husband and I live on Pork Steaks. They are very
cheap (.99lb. on sale) and with a little garlic or onion salt they are particularly good.
These can be very fatty but remember if you grill or broil them most of the fat cooks off.
Pork Sausage
I buy whatever is on sale. I would not recommend buying
the per pound stuff out of the meat department. Again horror stories.
Chicken
No matter what kind of chicken you buy and how hard
they guarantee it. The chicken in the meat case has been frozen. Just be glad it was.
Fish
Do not buy fish from a meat case that does not
specialize in seafood and even then be wary. If it smells fishy take it back. A common
trick to making fish less smelly because its past its prime is to soak it in ice water
with a touch of bleach. I always buy frozen.
Walleye-Pollack
Walleye and Pollack are the same fish. Pollack is advertised as Walleye so you
will recognize it.
Pollack is a very good cheap fish.($1.99lb on sale) I have cooked this fish in an aluminum
foil pouch with butter and garlic. I have also breaded this fish with a soy flower
breading.
Orange Roughy
Quite a bit more expensive than Pollack but oh so good.
